Creamy Rice Pudding

Believe it or not, rice pudding does not get the attention it deserves, and I am always surprised with people who think this scrumptious dessert would not be appetizing most of the time fall in love after eating some.

I remember when my mom would make this dessert because we were low on cash and wanted something sweet. She would drum up a batch and it would always be warm to your tummy (we could not wait for it to chill in the fridge). You can use this recipe and switch out the raisins with your favorite fruit such as oranges, apples, or even strawberries if thats your kind of thing. Enjoy!

Homemade rice pudding is pudding made from cooking eggs and milk on the stovetop until thickened. Great as a dessert or a late night snack, you can eat it right after its done cooking or chilled overnight.

Ingredients:
 1 beaten egg
  cup granule sugar
 1 tbsp butter
 2 cups milk
 1 tsp vanilla flavoring
 1 ½ cups cooked rice
 1 cup raisins

Directions:

1. Mix together in medium size boiler milk, sugar, rice, and salt and cook over medium heat stirring often until thickened.

2. Mix in additional ingredients of beaten egg and raisins continuing to cook stirring mixture often for two to three more minutes until completely thickened.

3. Take off the burner and stir in vanilla and butter.

4. Serve warm or chilled.
